I always crave pizza but I am trying to cut back on carbs, so when I saw little street taco sized whole wheat tortillas at the store, I was inspired to revisit a recipe I created a few years back for Whole Wheat Mini Pizzas . This time I went in a slightly different direction, making flatbreads that are not very pizza like at all—no grated cheese, no tomatoes, no sauce, no meat. Right now it’s corn season and the combination of corn, smoked salmon, a little crunchy cucumber and goat cheese is a real winner. What takes this recipe from good to even better, is the addition of a bit of Chili Onion Crunch. Cabbage with Horseradish, Chives & Salmon Roe
Back in December I spent a few days in Seattle. I was very excited to check out new restaurants and in particular Renee Erickson's Bateau , considered one of the top new spots in Seattle. It’s a steak restaurant but the side dishes are no less glamorous than the exquisite cuts of heritage breed, grass fed and finished beef. One of my favorite dishes was the Cava-Butter Poached Cabbage with Horseradish, Chives and Ikura. I have no idea what the actual recipe is, but decided to recreate it as best as I could. Cabbage is a terribly under appreciated vegetable. Given a bit of care, it can turn into something really special. In this case, the buttery braising liquid, the horseradish, herbal freshness of chives and pop of salmon roe are the equivalent of giving cabbage the royal treatment. Bourbon Glazed Salmon Recipe
I like bourbon, but not whisky. I know, I know, bourbon IS whisky, but to me there's a big difference. American bourbon is smooth and sweet and has complex flavors that I enjoy in food--warm spices, fresh herbs, toasted nuts, all kinds of fruit, vanilla, coffee, toffee, chocolate, caramel and more. Whisky, is fire water. Though a fan of all whisky, Chef Michael Symon summed it up this way, "drinking whisky should be a massage, not a wax!" Symon was in San Francisco to talk about bourbon and Knob Creek in particular, an award winning bourbon made in small batches. Salmon Tacos with Mango Corn Salsa
To be honest, I haven't been feeling very inspired in the kitchen lately. I've been busy with lots of things including travel, and when I'm home I've been trying to eat the food in the freezer since it is on the verge of overflowing. But yesterday I was at the store and I found local king salmon on sale and some beautiful white corn. I thought about the mango I had and just like that, a plan came together. Sometimes ingredients speak to you and the lightbulb goes off. I diced the mango to serve with dessert a few nights before but it was firm and a little too sour. That's not good for dessert but it's excellent for salsa. The salsa can be used with chips, with roast chicken or scallops. It's actually pretty good without the tomatoes too. I was a little undecided as to which way I preferred it, so try it both ways and you tell me which you like better! This recipe has a lot of parts, but you can make the salsa and the sauce for drizzling ahead of time.......

Slow Roasted Salmon Recipe
Go get yourself some Copper River King salmon. RIGHT NOW. I am not kidding. I don't believe there is a more delicious salmon than Copper River King also known as Chinook and the time to enjoy it is right now. The season begins in the middle of May when the fish are gorgeous orange, rich with healthy fats, including the highest level of prized omega 3 fatty acids. It has a delicate flavor and velvet texture that cannot be beat. The quality of the fish declines as the season progresses so get some at the peak of deliciousness. Like right now. When cooking Copper River King you really want the fish to be the star. It doesn't need much fussing over. I prepared some this past week in various ways and here is what I would suggest, cook it either very quickly under the broiler or very slowly in a low oven.
