I enjoy Greek yogurt and have been eating a lot of it lately. But I’ve also been cutting back on sugar. While fruit, granola, jam or honey are classic toppings for yogurt, I’ve been wanting to take yogurt in another direction. Since I tend to favor savory breaktasts rather than sweet ones I decided to try some savory Greek yogurt toppings, something I've seen around the web recently. I brainstormed some ideas and was inspired by flavors from Korea, the Mediterranean, Scandinavia and Morocco--and everything I tried turned out really well. I imagine that the variations are really endless, I just stopped at four. That said, a little flaky salt really helps to marry the flavors. Use kosher salt or your favorite flaky sea salt for added crunch. While I choose to eat these for breakfast, they are also very good as an afternoon snack or as part of a light lunch. Farro & Winter Vegetables Recipe
I'm finding it hard to drag myself to the farmers market this Winter. It's cold, it's wet, it's sometimes muddy, and let's face it, it's not like I'm going to find luscious peaches, cherries or tomatoes. My haul last weekend consisted of baby cauliflower, Tuscan kale, French radishes, baby carrots, broccolini and sauerkraut. Healthy and delicious, but hardly anything to get excited over. Of course everything I bought was fresher and possibly a bit tastier than what I could have found in the supermarket. The baby carrots I bought were real baby carrots, and not those fake machine rounded carrot nubs you find in little bags. Not quite as sweet as strawberries, but pretty darn tasty when roasted. When I was shopping a dish started to come together in my mind, and the centerpiece was farro. Carrot Salad Recipe
As I mentioned in my first Hunger Challenge post this past Sunday, carrots are a bargain. They are nutrient dense, much cheaper than salad greens and can be served so many different ways. Last year I missed eating salad during the Challenge . This year I was determined to try to come up with some kind of a budget-friendly salad and carrots came to the rescue. All my recipes last year were for one pot style meals. They are easy on the wallet but don't allow for much variety on the plate. Remember those carrot and raisin salads you ate as a child? I really didn't want to make one of those. This has more of a tangy profile than a sweet one. It's inspired by a Moroccan version that I found in Claudia Roden's The New Book of Middle Eastern Food .
