I confess, I only cooked live lobsters once, and I kind of freaked out. I made Lee come and put the lobsters in the pot. That was several years ago, so when the nice folks at LobsterAnywhere offered to send me some fresh lobsters, I figured now was as good a time as any to overcome my phobia. LobsterAnywhere has been a wholesale purveyor since 1999, and their prices are a bit less than some of their competitors. They pride themselves on providing top quality hard shell lobsters from Maine and indeed, mine were very large and very lively when they arrived! They sent the lobsters with a booklet of very useful information, especially on the timing for boiling or steaming them. I went with steaming. Bison Tacos with Avocado & Radish
American bison are an important part of the prairie ecosystem and after a decline almost to extinction around the end of the 19th century, today there are many ranchers working hard to bring them back. I enjoy cooking and eating bison (sometimes referred to as buffalo). The brands I've tried thus far have all been grass fed, lean, raised in a more sustainable manner and well, delicious. You may be able to find ground bison at your supermarket and it's pretty easy to use in recipes that call for ground beef. Bison steaks however are another story. Because most bison is grass fed, it's leaner, like grass fed beef. Considered a highly nutrient dense food, it's lower in calories, fat and cholesterol than even chicken, it has 40% more protein than beef and is high in iron, omega 3 fatty acids and vitamin E. 20 Things to Do with Leftover Guacamole
Is there anything sadder than guacamole and no chips? And yet, it happens. Instead of stashing the guacamole in the refrigerator, this list of ideas should get the green out of the bowl and onto your plate! Just remember to season to taste before serving your new creation... 1. On a baked potato instead of sour cream or butter 2. On a BLT as a sandwich spread instead of mayo 3. Whisked into a vinaigrette or ranch salad dressing 4. On toast with a fried egg on top 5. Layer on a sandwich with mozzarella and tomatoes (good hot or cold) 6. As a topping on chili 7. Avocado Tofu Salad with Ponzu Recipe
This is a zen salad. For one thing, like meditation, it requires slowing down. Normally salad is something you throw together at the last minute. Not this one. Patience, little grasshopper. You need to marinate the tofu overnight. It's also simple and straightforward. And it requires no oil. I know what you're thinking, what does THAT have to do with being zen? I'll tell you. This is an enlightened salad. The avocado is rich enough that you really don't need any additional oil. I know there are people out there who don't like tofu, but I wonder, have they had any good tofu dishes? I like tofu with something to really give it flavor and tang. Ponzu sauce is perfect. The extra firm texture of this tofu really shouldn't bother even people with "texture issues." Happy New Year! It's hard after the holidays not to want to take a break from all the indulgence and make sweeping resolutions. My diet resolutions this year are simply to eat more soups and salads. Sure, I'd love to eat healthy, exercise more and lose weight but I'm trying to be realistic. When it comes to soup, there is no problem. I probably eat soup for dinner once a week. While I grew up eating salad every night, it's just not all that popular around my dinner table. I have a couple of ideas to shake things up. I am going to try to develop more interesting salad combinations and recipes. I am going to get creative with salad dressings and I am also going to try eating more salad for lunch. Winter Cobb Salad:Recipe
Last year I had the pleasure of having breakfast with Michael Symon at a demo that he did at Williams-Sonoma. From recipes in his cookbook, Michael Symon's Live to Cook , he made creamy scrambled eggs with goat cheese, potato pancakes and of course, plenty of bacon. Michael Symon loves bacon, it features prominently in many of his recipes. The next best thing to eating Michael Symon's food, is seeing him cook, so you can replicate his recipes at home. Right now you can see a number of videos with Michael Symon at EatWisconsinCheese.com , where he demonstrates some very interesting techniques. For example, he makes gnocchi that is cooked in a pan, with no need to parboil. I'm always looking for more salad recipes and I like his version with arugula, apples, radishes and Wisconsin blue cheese. Cucumber Avocado Soup: Recipe
Last Summer I spent my birthday up in the Napa valley. I stayed at a spa, went wine tasting and ate out, of course. It was sunny and relaxing and just a little bit indulgent. I had a terrific time and especially terrific meals, the highlight of which was a cool creamy soup at chef Douglas Keane's restaurant Market , in St. Helena. Frankly the soup ingredients sounded like a spa treatment--yogurt, cucumber, avocado, was it a soup or a facial? Inspired to create my own version I gathered a whole bunch of fresh green ingredients and started experimenting. If your cold soup repertoire consists of gazpacho, try this one on for size. It's a great solution for dinner on a hot night, especially since it can be made in minutes and without heating up the kitchen. So how is my soup different from Keane's ?
