Roast Chicken with Asparagus & Leeks Recipe + Giveaway!

Foster Farms  is one of the larger suppliers of chicken in California. It’s a brand you’ll find in most supermarkets. So I was pleased to learn they are now offering organic chicken . At my local supermarket they only had boneless and skinless breasts and thighs, and while I much prefer purchasing whole chickens I did want to give the product a try.  Because I don’t usually, if ever, cook with boneless skinless chicken thighs, I turned to the ever dependable Faith Durand at The Kitchn for a foolproof technique . I added an herb paste, asparagus and leeks and reduced the pan sauce to make a glaze. It’s easy peasy and great for a quick meal that will be done in just over 30 minutes. The leeks, asparagus and herbs give the dish a fresh and light feel.  Although I purchased the chicken with my own money, I did accept four $20 Safeway gift cards for you, my readers, from Foster Farms. Asparagus Hot Brown Recipe

When I was in Louisville Kentucky a couple of weeks ago I tried the famous Hot Brown sandwich at the Brown Hotel . It's a rich combination of dreamy Mornay sauce, hearty turkey, a couple of tomato wedges and crisp bacon on top. Broiling the sandwich makes the tomatoes and sauce even tastier. But it's a monster! I really don't know how anyone can finish it. If you go to Louisville, by all means do try it. If you don't have an enormous appetite, you can order a smaller portion of the Hot Brown. It's not on the menu but it is available upon request. All over Kentucky you will find different versions of the Hot Brown. Some have ham instead of turkey or a combination of both, or seafood and no turkey or ham. When I got home I decided I would try my hand at making a slightly lighter version of this delectable sandwich. But I figured why not try it with asparagus? Roasted Asparagus with Green Garlic & Panko Recipe

This past Saturday at the Ferry Plaza farmer's market I found lots of harbingers of Spring, all green--asparagus, green garlic, artichokes and even obscure ones like wild radish rapini. I bought a bit of each. The rapini I will blanch then probably toss with dressing or pasta and the artichokes I will surely roast. But I picked up the asparagus and the green garlic without any specific plans. Green garlic is milder than regular garlic and tastes and looks a bit like large bulbous scallions. There are lots of recipes that use green garlic as an accent in soup , sauces, risotto and pizza . You can chop and saute them the same way you would any other green onion. Because green garlic is in season at the same time as asparagus it is often paired with it and frankly every asparagus and green garlic recipe sounds great to me. Ah, Spring! We are enjoying a warm spell right now and the fresh produce reflects the change of seasons with earthy root vegetables giving way to tender bright greens. I am so happy to have sunshine and bright green asparagus to eat! I recently discovered how delicious asparagus is when served raw, in salads. The trick is to shave it thinly with the sharpest vegetable peeler you have, then dress it with oil, lemon and salt so it wilts, just slightly. Asparagus is like the poster child for Spring. I had eaten quinoa, but never tried cooking it until just recently when I received some samples of it--red, white and black--from Roland Food . Reading about quinoa I discovered while it has the texture of grain, it's actually a fruit. It's also gluten-free. It is very bitter unless thoroughly soaked and rinsed. Spring Omelette: Recipe

The addition of fresh herbs breathes life into dishes. Herbs are vibrant, bright and introduce flavor that is so startlingly different from dried herbs that I can never understand recipes that imply they are interchangeable. In Italy I learned to make spaghetti with garlic, olive oil, chile flakes and parsley. It wasn't just the color contrast but the lively springiness of the parsley that made this simple dish so wonderful. Likewise sage leaves crisped up in butter or olive oil lend intensity and crunch, a handful of cilantro in a tossed green salad gives it a lemony zing and a sprinkle of chives on smoked salmon adds a delicate, almost sweet oniony flavor. I have a little herb garden and I do mean little. Cool Quesadilla Combos:Recipe

Somewhere along the line I seem to have forgotten about quesadillas. But recently a couple of factors lead to me rediscovering them and their potential. One is the Organic Whole Wheat & Corn Flour Tortillas available at Trader Joe's . Each tortilla has only one gram of fat, five grams of fiber and is high in iron. They fit into my "try to eat more whole grain foods" resolution. A little experimenting lead me to discover that the nutty flavor of whole wheat tortillas is really good with non-traditional, not-necessarily Mexican fillings. The other bit of inspiration came from a recipe I read in Sara Foster's Casual Cooking for Grilled Shrimp and Goat Cheese Toastadas. That jumping off point lead me to create a shrimp, avocado, radicchio and goat cheese quesadilla with a drizzle of chimichurri sauce. It was truly outstanding. Asparagus Risotto Recipe

 One day it's pouring rain and the next it's sunny and bright. Trees are already blooming with cherry blossoms, the delicate pink petals sometimes getting washed away in a sudden downpour. The hills all around the Bay Area are green and lush. And in the store you can find fresh strawberries, artichokes and asparagus. I think one of the reasons I love the Spring so much is the tender delicious fruits and vegetables. After eating hardy root vegetables and cabbage, chard, potatoes and leeks, the vegetables of Spring are a welcome change of pace. They are a wonderful reminder of new life and fresh beginnings. Asparagus is available much of the year but in the Spring it is at it's best. My favorite way to serve asparagus is in risotto. I make a broth from the stems and add the tips and the tender stems to the rice at the last moment so it stays tender-crisp. While Winter vegetables are wonderful cooked in soup or mashed somehow Spring vegetables seem too delicate to manhand......
